One of the must-have ingredients in my fridge is Chorizo – as a few bits of this Spanish paprika sausage can really jazz up meals or likewise side dishes and salads. This Chorizo and tomato omelette is a perfect example – in just 10 minutes you can create a yummy and very filling meal. You can add some Spanish-style cheese if you like and use spicy Chorizo, if preferred. Serve it with flat bread or wholesome buns.
