Coconut and chocolate muffin

The batter of these coconut and chocolate muffins can be mixed together in five minutes then the baking only takes 20 minutes. So it’s a perfect snack for parties, afternoon teas, picnics, etc. Given it’s so easy to make, it’s an ideal recipe for kids to try to bake. Also, it’s dairy- free! I used cocoa coconut milk – if you don’t have any, just use plain coconut milk and add 1 Tbsp cocoa powder to the batter.

Ingredients
  

  • 2 cups of flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup of coconut milk with cocoa
  • 1 cup unrefined cane sugar
  • 1 large egg
  • cup of sunflower oil
  • ½ cup of desiccated coconut unsweetened

Method
 

  1. Preheat the oven to 180°C.
  2. Mix the flour, baking powder, sugar and salt in a large bowl.
  3. In another, smaller, bowl mix the egg, oil and coconut milk.
  4. Combine the two mixtures, then fold in gently the desiccated coconut.
  5. Spoon the batter into silicone muffin cases or a lined muffin tin.
  6. Bake for 20-25 minutes, then sprinkle with coconut and let it cool on a rack.
