Cucumber and coriander relish

This cucumber and coriander relish is a lovely little condiment for sandwiches, burgers, barbecued food and so on, or can be used on nibbles and appetizers. It keeps well in the fridge, particularly if stored in a sterilized, sealed jar.

Ingredients
  

  • 1 cucumber
  • 4 Tbsp white wine vinegar
  • 1 Tbsp granulated sugar preferably unrefined
  • ½ tsp salt
  • 1 tsp coriander seeds
  • 30 g fresh coriander

Method
 

  1. Cut the ends of the cucumber, then cut in half along its length. Using a spoon scrape out the seeds.
  2. Chop the cucumber into 1 cm cubes & put them into a bowl.
  3. Mix the salt, vinegar, sugar and coriander seeds. Season to taste.
  4. Pour the dressing over the cucumber.
  5. Chop the coriander and mix in with the cucumber.
  6. If you can, chill for an hour or so before serving.
