Easy Greek salad
One of my favorite Summer salads is the Greek salad because it’s very easy to make and can be served as a main for a light lunch or a side dish with grilled fish and meat. Also, it can be made in advance so it’s perfect for summer parties, barbecues and picnics. Despite the fact that it’s a simple salad there are hundreds of recipes to create the “perfect” or authentic Greek salad – this is a super easy version, using the basic ingredients and served with a super simple vinaigrette. Serve it with toasted or grilled pitta!

- Slice the tomatoes into wedges.
- Cut the cucumber in half ( lengthwise) and scoop out the seeds and discard. Cut it into rough, 2 cm cubes.
- Thinly slice the onion. Drain, then cut the feta into 2 cm pieces.
- Put the tomatoes, onion, cucumber and feta in a serving bowl. Add the mint and olives.
- Mix the oil, lemon juice and oregano. Season with salt and pepper to your taste.
- Pour the dressing over the salad, then toss gently.
