Halloumi and green pea frittata
This super easy Halloumi and green pea frittata is ideal for a light lunch or brunch, also as nibbles at picnics and drink parties. I used basil but you can add any fresh herbs you like – oregano, mint and parsley would work particularly well.

- Dice the halloumi into 1cm cubes. Finely chop the herbs.
- Lightly beat the eggs, season with salt and pepper. Add the halloumi and peas. Mix in most of the herbs.
- Heat the oil in a frying pan over medium heat. When hot, pour in the egg mixture and let it spread out evenly. Put a lid on and cook for about 5 minutes, then turn down the heat and cook until the egg is completely set on the surface. Scatter the remaining herbs on the top.
- Let it cool and cut it into wedges or squares.
- Serve it with a green salad.
