Halloween Jalapeno mummies

Background
These Halloween Jalapeno mummies look amazing and taste really yummy! They are very easy make - and they can be vegan and gluten-free too. For the eyes you can use olives, chilli paste, dried or fresh fruits. Make sure you use full fat cream cheese - the reduced fat version will melt and spread out.
Ingredients
- 12 padron or jalapeño peppers
- 1 pack cream cheese (can be vegan)
- 2 Tbsp chopped chives
- 1 pack vegan /gluten-free puff pastry
- For eyes: olives, chilli paste, raisins, mini grapes, cranberries, red currants etc
Instructions
- Preheat oven 180°C.
- Mix the cream cheese with the chives, set aside.
- Cut the peppers in half lengthwise and remove the seeds. Leave the stem on.
- Roll out the puff pastry. Using a pizza cutter, cut out 0.5 cm thin long stripes.
- Fill each pepper half with the cream cheese mixture, then wrap them with the pastry, leaving a gap for the eyes. Use two pieces , if necessary.
- Place them on a lined baking sheet, then bake in the oven for 8-10 minutes.
- Remove the sheet from the oven and let them cool a bit.
- Press the eyes into the cheese where the gap is.
- Serve warm or at room temperature.
