Healthy Celeriac and Leek Soup

If you are on the 5:2 or other diet, this Healthy Celeriac and Leek Soup is the perfect filling meal to keep you going. It really is delicious and works out at only 72 kCal per portion! I make it in a pressure cooker but you can also simmer it instead for about 30 minutes – though do remember to stir regularly.

Ingredients
  

  • 8 g oil spray 8 kCal
  • 9 g Garlic 13 kCal
  • 450 g Leeks 99 kCal
  • 1800 g Celeriac 324 kCal
  • 130 g Sweet potato 113 kCal
  • 1000 g Vegetable Stock 40 kCal

Method
 

  1. Peal and finely chop the garlic. Peal and wash the celeriac, then chop into chunks. Clean the leeks and sweet potato then cut into chunks.
  2. Spray the oil into the pressure cooker pan then, over a medium heat, add the garlic & leeks. Stir for a couple of minutes to soften.
  3. Put in the other ingredient. Turn up the heat and bring up to high pressure for 8 minutes (10 for medium).
  4. Allow to cool. Remove lid and use a hand-blender to create a potage.
  5. Season to taste and serve.
