Healthy Vegan Fruit Cake

These days it’s so easy to get vegan cakes in delis & cafes, even in supermarkets. These may be vegan but certainly not healthy – loaded with sugar, additives, artificial flavourings and so on. It’s much better to bake your own cakes, as you can control what goes in them. It’s actually very easy to make a healthy vegan fruit cake – you don’t need to be a baker!  I made this one with mixed summer berries, but you can use other fruits according to the season (cherries, apricots, cranberries, plums or pineapple would work too). Alternatively, use frozen fruits (but these have to be defrosted first). You can use other dried fruits too – apricot, cranberries, dates, prunes would work. This Healthy Vegan Fruit Cake is perfect for breakfast or a morning/afternoon snack. I also recommend it for kids parties, picnics, garden-parties too.
