Jackfruit and green pea burger

Thisvegan jackfruit and green pea burgeris a zesty version, ideal on Spring and Summer days. If you don’t like oats, you can use fine polenta or rice flour for binding – alternatively make someflax-eggs. Serve it with your favourite condiments and toppings, in buns or flatbread of your choice.

Ingredients
  

  • 1 tin jackfruits
  • 3 sundried tomatoes
  • 2 cloves of garlic
  • 1 tsp tomato purée
  • 1 cup green peas defrosted
  • 2 salad onions
  • 2 Tbsp dill
  • 1 lemon zested
  • ½ cup oatmeal
  • Buns salad, condiments of your choice

Method
 

  1. Drain the jackfruit and put it into a food processor. Add the garlic, sundried tomatoes, dill, spring onions and tomato purée. Season with salt and pepper.
  2. Whiz for a few seconds, then add the peas, dill and lemon zest. Whiz again, until you get a coarse mixture.
  3. Spoon the mixture into a mixing bowl and add enough oatmeal to have a malleable mixture. Set aside for 10-30 minutes.
  4. Meanwhile, prepare your condiments, salads, toppings and buns for the burgers.
  5. When you’re ready to cook the patties, form about 6 or 8 equal sized balls from the mixture, then flatten these between your palms.
  6. Put the patties onto a lined baking sheet and bake in a hot oven for 15 to 20 minutes until golden, or fry them in a pan over medium heat for five minutes or so, until golden.
  7. Assemble the burgers with your chosen buns,toppings and condiments.
