Marinated Herring and Avocado Salad

This marinated herring and avocado salad is a quick, nutritious and flavourful dish inspired by Nordic and Eastern European cuisine. Pickled or marinated herring is a versatile ingredient often found preserved in oil or vinaigrette, accompanied by pickled onions and gherkins. This dish is ready in just 5 minutes – perfect for a light lunch, a refreshing starter or a simple brunch served with a slice of sourdough bread. For a heartier meal, serve with boiled new potatoes alongside the salad. It’s high in healthy fats, rich in omega-3s, and full of vibrant flavours — proof that healthy eating can be both satisfying and effortless.

Ingredients
  

  • 2 rollmops marinated/pickled herring fillets
  • 1 Tbsp olive oil optional
  • Fresh lemon juice
  • 1 ripe avocado
  • 2 handfuls of wild rocket arugula
  • 6 Cherry tomatoes

Method
 

  1. Unroll the herrings, reserving the pickled onions from the marinade.
  2. Cut the herring fillets into bite-sized pieces.
  3. Scatter the rocket onto two individual plates or one large serving platter.
  4. Arrange the herring pieces evenly over the rocket.
  5. Peel and stone the avocado, then slice or dice the flesh. Arrange the avocado around the herring.
  6. Halve the tomatoes and arrange them around the avocado pieces.
  7. Drizzle with fresh lemon juice and a little olive oil, or use some of the vinaigrette from the herring marinade for extra flavour.
  8. Scatter the reserved onion pieces on top, and serve immediately with sourdough bread.
