Mexican burger

This recipe is for those burger-lovers who also like a bit of fire in their food. It’s perfect for parties as you can prepare the patties well ahead. As to serving – you can put them in a bun or eat them with corn-tortilla. Either way, serve the burgers with zingy salsa and quacamole (or sliced/mashed avocado).

Ingredients
  

  • 1 Tbsp sunflower oil
  • 2 small red onions finely chopped
  • 2 cloves garlic pressed
  • 1 or 2 Tbsp Chipotle paste
  • ½ tsp ground cumin
  • 500 g lean minced beef
  • 1 medium egg slightly beaten
  • 1 small handful of parsley leaves chopped

Method
 

  1. Heat the oil in a frying pan and cook the onions until soft. Add the garlic and stir for 1 minute. Add the cumin and chipotle paste, fry for 1-2 minutes. Transfer it to a plate and let it cool .
  2. In a large bowl mix the meat, eggs , parsley and the cooled onion mixture. Season with salt and pepper. Rest until you’re ready to cook the burgers.
  3. Turn on your BBQ or heat oil in a griddle pan.
  4. Form 6 balls of the mince and flatten them slightly between your palms.
  5. Cook the burgers for about 4 minutes on each side (depending on how well cooked you like it).
  6. Serve in grilled buns or on corn tortilla with salsa and relishes to taste.
