Miso soup with soya beans and shiitake

This miso soup with soya beans and Shiitake is super healthy  and easy to make. It’s quite filling too if you serve it with wholesome noodles (I used black been noodles).

Ingredients
  

  • 500 ml vegetable stock
  • 50 g Shiitake mushrooms
  • 100 g soya beans
  • 1 tsp miso paste
  • 1 tsp dried wakame
  • Lemon juice

Method
 

  1. Heat the stock in a saucepan, add the shiitake and beans, then cook for 8-10 minutes. Add the wakame to the soup for the last 2 minutes of the cooking.
  2. Mix the miso paste in a small bowl with a ladleful of the soup until you get a smooth paste, then add this to the soup. Turn off the heat.
  3. Serve the soup immediately – with precooked noodles, if you like.
