Pan-fried garlic and thyme prawns

During warm evenings in the Summer at drink-parties the rest of the year I find tapas the most satisfying snacks. I particularly love theclassic Spanish Garlic prawns(Gambas Al Ajillo) – I almost always order it in a Tapas bar. At home, I like to experiment adding different herbs and spices. This pan-fried garlic and thyme prawns is one of my variations. It’s super quick and easy to make – perfect nibble with aperitif or as a starter in a dinner menu.

Ingredients
  

  • 350 g raw prawns in shell
  • 2 tbsp olive oil
  • 3 cloves of garlic
  • ½ tsp dried chilli flakes
  • 1 tbsp fresh thyme leaves
  • 1 lemon zested & juiced

Method
 

  1. Thinly slice the garlic.
  2. Heat the oil in a large frying pan, then gently cook the garlic, chilli flakes and thyme leaves fo a minute or so, making sure they don’t burn.
  3. Add the prawns (in their shells), stir-fry, then add the lemon zest and juice. Put a lid on and steam over medium heat for 3-5 minutes, until the prawns have just turned pink.
  4. Serve warm.
