Pasta with spinach and walnut pesto

This pasta mixed with spinach and walnut pesto is a quick and easy dish that’s perfect on lazy or busy days as it’s ready in 15 minutes. It’s dairy-free and can be gluten-free too if appropriate pasta is used.

Ingredients
  

  • 400 g pasta
  • 200 g spinach
  • 1 small bunch of mint
  • 1 small bunch parsley
  • 1 small lemon
  • 1 clove garlic minced
  • 50 g walnut
  • 50 g raisins optional
  • Extra virgin olive oil

Method
 

  1. Grate the zest of the lemon then squeeze out the juice.
  2. Tip these into a small blender, add the herbs & nuts, then pulse to a coarse paste. Season with salt and pepper, then slowly and gradually add enough olive oil to make a thick paste.
  3. Wash the spinach, drain, then put in a mixing bowl.
  4. Boil the pasta according to the instructions on the package. Pour cooling water over the spinach and leave for 2 minutes until it’s wilted, then drain and squeeze out the water through a sieve.
  5. Chop it up roughly and stir through the pasta together with the pesto and raisins (if used).
  6. Serve warm.
