Pea and mint hummus

It’s so easy to create homemade hummus, yet we keep buying it from grocery stores!  A good example is this herby pea & mint hummus which is much more tasty and interesting than anything you get in a supermarket! And it takes only a few minutes to whiz it up! Serve it with crudités and /or toasted pitta bread.

Ingredients
  

  • 250 g green peas
  • 2 cloves of garlic
  • 1 Tbsp extra-virgin olive oil
  • zest and juice of 1 lemon
  • 1 tin chickpeas 400g drained
  • 2 Tbsp tahini paste
  • 1 handful mint leaves roughly sliced
  • 1 handful of chives or basil chopped

Method
 

  1. Blanch the peas in a pan of boiling water for a couple minutes then drain and rinse under cold water, then drain again. Put a handful aside.
  2. In a food processor, whizz the remaining peas with the chickpeas, garlic, oil, lemon zest & juice, tahini and herbs, until you get smooth but slighly textured paste.
  3. Season with salt and pepper to your liking.
  4. Garnish it with some mint leaves, olive oil and freshly ground pepper.
