Beetroot and radish salad with walnut pesto

Background

You can make this beetroot and radish salad with walnut pesto under 10 minutes! It’s very healthy - gluten and dairy-free too, although you can add some Parmesan to the dressing (or vegan Parmesan) if you like. It’s perfect for parties, picnic or lunchbox, and for those who are on a diet.

Ingredients

3 medium cooked beetroot (not pickled)
8 radishes ( medium-large)
1 celery stick
For the dressing:
2 handful (1 pack) of basil leaves
2 Tbsp chopped walnuts
2 Tbsp extra virgin olive oil
1 garlic clove
Juice of ½ lemon
Salt &pepper
To serve: chopped basil leaves and walnuts
