Green Pea and Cottage Cheese Fritters
Background
These green pea and cottage cheese fritters are healthy and easy to make. Naturally high in protein and fibre, they’re light yet satisfying, which can be enjoyed as a wholesome snack, a lunchbox filler, or a savoury side dish. Serve them with soups and stews as a high-protein alternative to bread or scones, or serve them with a dip like tzatziki or hummus for a nutritious appetizer. Best of all, you can fry, bake, or air-fry them depending on your preference.
Tip: These fritters can be made ahead and stored in the fridge for up to 3 days or frozen for quick meal prep.
Ingredients
- 1 cup green peas (fresh or frozen, defrosted if frozen)
- ½ cup cottage cheese
- 1 egg
- 3 Tbsp chickpea flour (adjust as needed)
- 1 Tbsp Greek yogurt
- Olive oil (for brushing or frying)
- Optional: 2 spring onions, finely chopped, or 1 garlic clove, minced
Instructions
- Lightly mash the green peas together with the cottage cheese in a mixing bowl.
- Add the spring onions or garlic (if using) and mix well.
- Stir in the egg and Greek yogurt. Gradually add the chickpea flour until you have a thick, malleable batter that holds its shape.
- Shape the mixture into golf ball–sized portions and gently flatten them into fritters with your hands.
- Brush each fritter with a little olive oil.
- To fry: Cook in a lightly oiled pan over medium heat for about 3–4 minutes on each side, until golden brown.
- To air-fry: Place fritters in the basket and cook at 180°C (350°F) for about 10 minutes, flipping halfway.
- To bake: Arrange fritters on a lined baking sheet and bake at 190°C (375°F) for 15–18 minutes, flipping once.
- Serve warm as a snack, side or with your favourite dip.
