Roasted aubergine and feta fritters

These gluten-free, roasted aubergine and feta fritters have a delicate texture and a slightly spicy flavour. They’re easy to make, filling and healthy – ideal as nibbles with a drink, or for picnics and lunchboxes. You can also serve them with a salad for a light lunch. Instead of gram flour, other types of gluten-free flour can be used too or indeed plain flour if gluten isn’t an issue for you.

Ingredients
  

  • 1 roasted aubergine
  • 1 garlic clove
  • ½ tsp smoked paprika
  • Couple of pinches of cayenne optional
  • ½ tsp cumin powder
  • ½ cup chickpea flour
  • 2 medium eggs
  • 1 Tbsp chopped mint
  • 1 Tbsp chopped parsley
  • 100 g feta

Method
 

  1. Scoop out the aubergine flesh into a mixing bowl. Add all the other ingredients, except the feat and blend to a textured batter. Season with salt and pepper, then crumble the cheese over and combine.
  2. Heat a spoonful of olive oil in a frying pan and add dollops of the batter. Use the spoon the flatten them, speeding into circular shapes. Cook for a couple of minutes. When the surface has set, flip them over and cook for another minute or so.
  3. Transfer them to a plate and cook the second batch.
  4. Serve them warm or at room temperature.
