Grilled asparagus with gremolata
Background
I make this grilled asparagus with gremolata all year round when I need a super quick side dish for a Sunday roast or a lazy weekend brunch/lunch (served with bagel). The recipe is vegan but feel free add some prosciutto or Parmesan shaving. Here are some tips how to make zesty gremolata>>
Ingredients
- 1 bunch asparagus
- Olive oil
- Lemon juice
- Gremolata:
- ½ lemon
- 1 handful parsley leaves
- 1 clove of garlic
Instructions
- First make the gremolata.
- Rinse, then pat-dry and finely chop the parsley leaves.
- Grate the lemon rind and mince the garlic. Mix with the parsley. Season with salt and pepper and add some lemon juice - you should get a coarse paste.
- Cut off the woody ends of the asparagus, then rub with some oil. Heat a griddle pan (or BBQ in the Summer) and grill them for about 5 minutes until tender and lightly charred.
- Put the asparagus on a plate and rub them with the gremolata.
- Serve immediately.
