If you want to finish your barbecue with something easy and delicious – try out this Maple glazed BBQ pineapple recipe! It’s super easy to make - just put the pineapple slices on the BBQ whilst you’re eating your main meal. Serve it with ice-cream (coconut or lime) or yoghurt/crème fraîche mixed with maple syrup for a healthier option.
Ingredients
- ½ pineapple
- 1 Tbsp maple syrup
- 1 tsp lime juice
- 1 tsp melted coconut oil (optional)
- 1 Tbsp chopped pistachios
- To serve: maple syrup, ice-cream or natural yoghurt mixed with maple syrup
Instructions
- Cut the pinapple into 2cm slices or wedges (no need to peel).
- Mix the maple syrup, lime juice and oil in a small bowl and brush the pineapple with it.
- Put the pineapple on a the BBQ, grill or griddle pan (over medium-low flame/heat) – and cook on each side for about 5 minutes until lightly charred and caramelized.
- Put them on a plate, drizzle over some maple syrup and lime juice then scatter the pistachios on top.
- Serve with ice-cream or yoghurt of your choice.
