Omelette with sardines and tomatoes

Background
This omelette with sardines and tomatoes is a high-protein meal, rich in calcium and Omega 3 too. You can add some cheese if you want or if dairy is not an issue for you. Serve it with sourdough or chickpea flatbread.
Ingredients
- 2 large or 3 medium eggs
- 3 spring onions
- 1 handful cherry tomatoes
- 1 Tbsp olive oil
- 4 sardines in spring water
- Salt & pepper
- 2 Tbsp grated cheese (optional)
- 1 Tbsp chopped parsley leaves
Instructions
- Gently whisk the eggs in a bowl.
- Finely chop the spring onions and halve the tomatoes.
- Heat the oil in a frying pan.
- Add the spring onion and tomatoes and fry for 2-3 minutes, until softened.
- Pour in the egg mixture, let it spread out evenly, then add the drained sardines.
- Scatter the grated cheese on top, if used.
- Put a lid on, and after a minute turn down the heat and gently cook for about 5-8 minutes until the egg has set.
- Scatter the parsley all over the omelette then serve immediately.
