Background

These gluten-free cookies are made with honey, not with sugar and even the egg can be left out. They are super-easy to make and the result is really soft and yummy - the perfect snack with your tea or coffee!

Ingredients

½ cup rice flour
2 Tbsp soy flour
½ tsp baking powder
2 Tbsp sunflower oil
1 egg (optional)
2 Tbsp honey
½ tsp almond extract
1 tsp vanilla extract

Instructions

Preheat the oven to 180°C.
Mix the oil, honey and extracts.
In a larger bowl mix together the flour and baking powder, then add the liquid mixture. Mix and knead with your hands into a soft dough, then form tiny, about 3cm balls.
Press down the balls between your palms and place them on a lined baking sheet and bake.
Bake for 8-10 minutes or until golden brown. Cool them on wire rack.
