Smoked salmon and egg cups
Background
Muffin tins and silicon cases can be used to make other things too, like frittata or omelette happenings! These smoked salmon and egg cups are very easy to make - they are perfect for a special brunch or lunch, parties and picnics. You can add other ingredients as well - such as tomatoes, chopped courgettes, red peppers, pieces of bread or cheese, chives, basil and so on.
Ingredients
- 6 eggs
- 200 ml milk (or dairy free milk)
- 150g smoked salmon
- zest of 1 lemon
- 3 Tbsp chopped dill
Instructions
- Preheat the oven to 180°C. Grease a muffin tin or line it with paper cases.
- Beat the eggs with the milk. Thinly slice the smoked salmon, add it to the egg mixture together with the lemon zest and dill. Combine well. Spoon this into the cups and cook for about 20-25 minutes until set and golden brown.
- Serve warm or at room temperature.
