Spiced bean stew with sausages
Background
If you like comfort food and baked beans, try out this spiced bean stew with sausages! You can make it with ready-made spiced tomato sauce, although you can make your own so easily. Here is a recipe for home-made spiced tomato sauce >> Also, do use good quality sausages (pork, beef, chicken, spiced, with herbs etc), vegan and vegetarian versions would work too. Serve it with crusty bread.
Ingredients
- 500 ml chilli tomato sauce
- 1 Tbsp olive oil
- 6 good quality sausages (can be vegan too)
- 100 ml red wine
- 1 handful of parsley, chopped
- 1 tin butter beans (400g), drained
Instructions
- Heat the oil in a heavy based saucepan, then then cook the sausages thoroughly all over.
- Pour in the wine and reduce it by two-third.
- Add the tomato sauce, beans and parsley to the sausages. Simmer for about 15 minutes.
- Serve warm.
