Ingredients

  • 2 medium-ripe pears
  • 100 g Roquefort cheese
  • 50 g walnut
  • 1 Tbsp crème fraiche
  • 1 Tbsp red port
  • 1 sprig onion
  • Salt and pepper

Method

  1. Preheat the oven to 180°C.
  2. Crumble the cheese into a mixing bowl.
  3. Chop roughly the nuts, add to the cheese. Thinly slice the onions, add to the cheese.
  4. Cut the pears in half lengthwise. Remove the core and seeds. Using a melon baller gently scrape out most of the flesh. Chop this up and add to the cheese.
  5. Finally add the port and crème fraiche to the cheese, season to taste, then mix well.
  6. Fill the pear halves with the mixture and place them onto a baking tray.
  7. Roast for 5-8 minutes until the cheese starts to melt.
  8. Serve warm.
