Salmon fish curry

This recipe come from southern state of Andhra Pradesh and is a favorite of mine. Its very easy to make and is very delicious.

Ingredients
  

  • For marinate:
  • 1 tsp red chilli powder
  • 1 tsp ginger garlic paste
  • ¼ tsp turmeric powder
  • 1 tsp salt
  • For curry:
  • 8-10 salmon fish fillets cleaned and cut to required size
  • 4 Tbsp oil
  • 2 medium onions finely chopped
  • 4 green chillies slit length wise
  • ¼ turmeric powder
  • 2 tsp chilli powder
  • ½ tsp ginger garlic paste
  • 1 tsp garam masala
  • ½ cup thick coconut paste
  • Handful of coriander leaves finely chopped
  • 2 cups water
  • Salt to taste

Method
 

  1. To marinate the fish, in a bowel add the thoroughly washed and clean fish fillets. To the fillets, add 1 tsp red chilli powder, 1 tsp ginger garlic paste, ¼ tsp turmeric powder and 1 tsp salt. Mix the ingredients and coat the fish fillets on both side. Set aside for 30 min.
  2. Heat oil in a broad bottomed vessel on over medium flame. Add the chopped onions , green chillies and ginger garlic paste. Fry until the onions are light brown and the raw smell of ginger garlic paste is gone.
  3. Place the fish fillets one by one.
  4. After a minute, turn them gently, and fry on the other side for 2 minutes.
  5. Add coconut paste, chilli powder, turmeric powder, salt, garam masala and water and mix gently.
  6. Bring it to a boil, reduce flame, cover with lid and simmer for 15 minutes or till you get the consistency of your choice.
  7. Garnish with coriander leaves. Serve hot with rice or roti.
