Shiitake and green beans with tofu

This shiitake and green beans with tofu is a lovely Japanese-style vegan meal, served with noodles or rice. Alternatively, you can serve it as a side dish – it  goes well with beef and fish.

Ingredients
  

  • 125 g shiitake mushrooms
  • 100 g green beans
  • 1 small red onion
  • ½ red pepper or 1 red chilli pepper, deseeded
  • 1 clove of garlic
  • 1 Tbsp oil
  • 2 Tbsp Kikkoman soy sauce
  • 1 tsp rice vinegar
  • 2 tsp Mirin
  • 50 g tofu
  • 1 tsp Sesame seeds
  • 1 small nori sheet torn

Method
 

  1. Thinly slice the mushrooms, garlic and onion. Dice the red pepper or chilli.
  2. Heat the oil in a frying pan or wok over medium heat. Add the onion and stir-fry for a couple of minutes. Add the garlic, mushroom & red pepper, then cover. Turn down the heat and sauté for 5 minutes until the mushrooms have released some liquid.
  3. Add the soy sauce, mirin, rice vinegar and beans, put the lid on and sauté for another 3-5 minutes over low heat until the vegetables are tender. Taste, and adjust to your liking.
  4. Crumble the tofu on top and stir-fry for a minute.
  5. Serve with the sesame seeds & nori scattered on top.
