Slow-roasted pork with spiced apple

This slow-roasted pork with spiced apple is perfect for lazy weekends. Just let it roast it in the oven for a couple of hours and you’ll get some yummy succulent pork. Serve it with mashed potatoes and roasted veggies. Don’t forget the gravy and the roasted apples!

Ingredients
  

  • 1 pork joint about 1.5kg
  • 3 apples
  • 2 cloves of garlic
  • 1 glass white wine
  • ½ lemon juiced
  • 1 tsp ginger
  • 1 star anises
  • 1 handful cloves
  • 1 tsp cinnamon
  • 1 onion
  • Salt and pepper
  • Honey

Method
 

  1. Preheat the oven to 160°C.
  2. Juice or blend two apples (or use apple smoothie). Pour this into a jar. Add the lemon juice, ginger and cinnamon.
  3. Put the meat in a roasting tray, then brush it all over with this mixture.
  4. Pour any remaining mixture into the tray and add the wine.
  5. Cut the onion into wedges and put it in the tray together with the garlic and star anis.
  6. Push some cloves into the fat & meat, then scatter the rest into the tray.
  7. Season with salt and pepper, then cover the tray with foil.
  8. Put the tray in the oven and slaw-roast for 2 hours.
  9. Take off the foil.
  10. Baste the pork with the cooking juice.
  11. Cut the remaining apple into wedges and brush them with a little honey. Put them around the pork.
  12. You can brush the pork skin with some honey, if you want some crackling.
  13. Turn the heat up to 200C and brown the skin and apples. This should take about 15 minutes.
  14. Transfer the meat and apples to a plate, cover and rest.
  15. Make some gravy from the cooking jus.
  16. Carve the pork and serve with your chosen side dishes, the spiced apples and the gravy.
