Spiced carrot salad with raisins

This spiced carrot salad with raisins goes really well with grilled lamb and chicken – alternatively you can mix it with couscous for a vegan dish. It’s best to make it ahead, even a day before, to allow the flavours to merge well. This salad is perfect for summer garden parties, picnic, barbecues and so on.

Ingredients
  

  • 2 cups grated or shredded carrots
  • ½ cup raisins
  • 2 Tbsp apple cider vinegar
  • 3 Tbsp olive oil
  • 1 Tbsp honey or date syrup
  • ½ tsp cumin powder
  • Pinch of cinnamon
  • Pinch of chilli flakes
  • 1 tsp chopped or grated ginger
  • Salt and pepper to taste
  • 2 Tbsp chopped Parsley
  • Sunflower seeds to serve optional

Method
 

  1. Put the carrots and raisins in a bowl.
  2. In another bowl, mix all other ingredients, except the parsley. Taste it and adjust it to your liking.
  3. Pour the dressing over the carrots and raisins, and mix well.
  4. Put a cover on and rest for at lest 30 minutes before serving.
  5. Just before serving, add the chopped parsley and combine.
  6. Serve with some sunflower seeds scattered on top.
