Stuffed marrow

Lots of people haven’t any idea what to do with a marrow. The easiest thing to do is to stuff it – either with some mince based filling or vegetables – and you get a delicious, healthy meal! This stuffed marrow is filled with a Bolognese-like sauce and baked for half an hour in the oven. You can make the filling ahead or use up some leftover Bolognese sauce or chilli con carne.

Ingredients
  

  • 1 celery stick
  • 1 yellow pepper
  • 1 red pepper
  • 1 onion
  • 2 cloves of garlic
  • 100 g mushrooms
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 4 Tbsp tomato purée
  • ¼ tsp cayenne pepper or ½ tsp crushed chillies
  • 1 large marrow
  • 450 g minced beef lean
  • Grated cheese of your choice optional

Method
 

  1. Finely chop the onion, celery, carrot then the bell peppers and mushrooms.
  2. Heat 1 Tbsp olive oil in a heavy-based dish then gently sauté the onion, celery and carrot. After about 5 minutes add the mushrooms and peppers.
  3. Now add the garlic and the spices and mix well for a minute or so.
  4. Add the mince, stir continuously until it changes colour then add the tomato purée and season with salt and pepper.
  5. Let it cook for about 10 minutes until the sauce gets thick.
  6. In the meantime set the oven to 160°C.
  7. Cut the marrow in half (lengthwise) and, using a spoon, scrape out the fibrous flesh. Put the hollowed marrow halves in a baking tray and spoon the mince sauce into them. Scatter some cheese on top, if liked, and bake for 25-30 minutes until the marrow flesh is tender.
  8. Serve warm!
