Tear and share snowflake mince pie

This tear and share snowflake mince pie is a good example – easy to make and it can easily be vegan or gluten-free if you’re using appropriate pastry and vegan mincemeat. Ingredients
  

  • 1 sheet ready-rolled puff pastry
  • 1 jar good quality mincemeat
  • 1 egg beaten (optional)
  • Icing sugar to serve

Method
 

  1. Preheat oven to 180°C. Line a baking sheet with parchment paper.
  2. Roll out the pastry. Using a rolling pan make the sheet a bit longer and thinner.
  3. Cut out two equal circles, using a plate that is about the width of the puff pastry.
  4. Put one of the circles onto the lined baking sheet. Using a spoon, spread the mincemeat over it, leaving a small rim around the edge.
  5. Place the second round of puff pastry on top, then press the edges gently to seal.
  6. Mark the centre of the circle with a small star cookie cutter – but don’t cut through!
  7. Using a pizza cutter, cut the circle into 12 equal segments, just up to the star.
  8. In pairs, twist the segments towards each other about three times, then pinch the edges together to seal.
  9. Brush the snowflake with egg wash, if you want it crunchy.
  10. Place the tray in the oven and bake the pastry for about 25 minutes or until golden brown.
  11. Let it cool, then sprinkle with icing sugar and serve.
