Turkey and feta koftas

These simple turkey and feta koftas have a Greek or Middle Eastern flavour to them –  you can spice them up with some ground cumin and chilli flakes if you like! Serve them with flatbread and  a yoghurty salad such as Tzatziki. It’s very easy to make them – ideal for a Friday-night homemade “takeaway” or parties, BBQs and so on.

Ingredients
  

  • 2 Tbsp olive oil
  • 1 small red onion
  • 500 g minced turkey
  • 100 g feta cheese
  • 2 Tbsp chopped parsley
  • Salt and pepper

Method
 

  1. Soak 8 wooden skewers in water.
  2. Finely chop the onion then fry it in 1 Tbsp of oil until soft. Let it cool.
  3. Turn on the grill/ BBQ or heat a griddle pan.
  4. Mix the mince minced meat with the feta, onion and parsley then season to taste with salt and pepper.
  5. Make 8 roulades with wet hands around the skewers. Make sure they stick to the skewers otherwise they will fall off!
  6. Brush them with the remaining oil and cook them for about 10 minutes, turning several times.
  7. Serve warm.
