Vegan and gluten-free pizza

You can’t go wrong with this vegan and gluten-free pizza made with puff pastry! You can use any grilled veggies, pizza sauces (jarred or homemade)  – and you can create one big or 2 medium sized pizzas of your choice. I made a pizza sauce by mixing chipotle salsa dip with a Tbsp of tomato purée.  For toppings I used grilled pepper& onion, black olives, mushrooms and chilli pepper. Instead of cheese I used vegan “feta”.

Ingredients
  

  • 1 sheet of gluten-free puff pastry ready-rolled
  • 3 Tbsp pizza sauce
  • 1 cup of roasted vegetables
  • 1 onion sliced
  • 3 mushrooms sliced
  • 8-10 olives
  • 1 handful rocket salad
  • ½ vegan “feta”

Method
 

  1. Preheat the oven to 200°C.
  2. Unroll the puff pastry and cut a big circle out (mine was round shaped already).
  3. Using a bland knife score a circle about 1 cm in from the perimeter to create a crust.
  4. Spread the pizza sauce evenly up to the crust. Arrange your vegetables on the pizza, then scatter the olives and half of the cheese on top.
  5. Put the pizza on a round pizza tray or on a preheated pizza stone.
  6. Bake in the middle of the oven for about 20 minutes, until the rim is golden and the cheese has melted.
  7. Slice with a pizza cutter and serve with plenty of freshly ground pepper, garnished with rocket leaves and crumbled “feta”.
