Whole Chicken in the Pressure Cooker

I bought a reduced price chicken in a supermarket one evening recently on the way home from work. It was a nice bird but it needed to be cooked that day and I had very little time to prepare it for supper – so I decided on this Whole Chicken in the Pressure Cooker method! It was extremely quick & easy but actually turned out beautifully moist and really tasty.

Cook Time 25 minutes
Resting Time 4 hours
Total Time 45 minutes

Ingredients
  

  • 2 Tbsp olive oil
  • 1 medium whole chicken without giblets
  • salt & pepper
  • 1 medium brown onion
  • 250 ml chicken stock
  • 1 tsp Italian herbs

Method
 

  1. Heat the oil in the pressure cooker. Rub the seasoning over the chicken then brown it all over in the hot oil.
  2. Push the unpeeled onion inside the chicken.
  3. Put the trivet into the pressure cooker, place the chicken onto it then pour in the stock.
  4. Put the pan on a high flame. Sprinkle over the herbs.
  5. Attach the lid and bring up to pressure. Turn down the flame and pressure cook for 25 minutes.
  6. Serve with the mash and green vegetables of your choice.
