Whole Chicken in the Pressure Cooker
I bought a reduced price chicken in a supermarket one evening recently on the way home from work. It was a nice bird but it needed to be cooked that day and I had very little time to prepare it for supper – so I decided on this Whole Chicken in the Pressure Cooker method! It was extremely quick & easy but actually turned out beautifully moist and really tasty.

- Heat the oil in the pressure cooker. Rub the seasoning over the chicken then brown it all over in the hot oil.
- Push the unpeeled onion inside the chicken.
- Put the trivet into the pressure cooker, place the chicken onto it then pour in the stock.
- Put the pan on a high flame. Sprinkle over the herbs.
- Attach the lid and bring up to pressure. Turn down the flame and pressure cook for 25 minutes.
- Serve with the mash and green vegetables of your choice.
