Ladies finger and tomato in tamarind gravy
Bendakaya(Ladies finger) and tomato pulusu (tamarind gravy) is a dish from southern state of Andhra Pradesh. The tanginess from the tamarind, the spice from the chillies and sweetness from the jaggery makes for a perfect balance of flavors.

Method
- Soak tamarind in hot water for 20 minutes and extract the pulp. keep aside.
- Heat a pan, with 1 Tbsp of oil on medium-low flame, once the oil is hot, add mustard seeds, cumin seeds and fenugreek seeds. Allow it to sputter.
- Add in chopped onion and sauté until the onion are translucent.
- Add Ladies Finger pieces and sauté well in medium flame until it changes color and becomes non sticky.
- Add tomatoes and sauté until they turn mushy. Now add turmeric powder, chilli powder and coriander powder. Mix together and sauté until raw smell of the spice powders go away.
- Add the tamarind juice and add required amount of salt as per your taste. Mix and bring to boil.
- Add a little water if needed and boil until ladies finger are well cooked.
- Add jaggery and mix well until the jaggery dissolves. Garnish with Coriander leaves.
- Serve hot with rice or roti.
