Wholesome Caesar salad
The disadvantage of the popular Caesar salad is that it has a very high caloric content. However, with few modifications, the calories can be reduced significantly. This Wholesome Caesar salad is a perfect example – it’s made with yogurt (instead of mayo) and wholemeal bread. It’s still very delicious. Perfect for summer garden parties.

Method
- Gently separate the leaves from the core, then rinse and dry them with a clean tea towel.
- Toast the bread, then rub them with the garlic. When cool, cut them into small croutons.
- Using a pestle and mortar, make a paste from the anchovies, garlic and mustard. Mix with the yoghurt, then season with salt &pepper. Taste and add some lemon juice to your liking.
- Arrange the salad leaves in a serving bowl, add the anchovy slices, then scatter the croutons on top. Pour over the dressing and sprinkle with a little Parmesan.
