Low-cal aubergine and courgette curry

If you’re on a calorie-restricting diet, such as low-carb, low-cal, or 5:2 and similar intermittent fasting plan, do try out this Low-cal aubergine and courgette curry! Not only is a portion less than 175 Kcal, it’s actually very tasty and filling! Serve it with “zero calories” noodles/rice or steamed brown rice (which is about 120Kcl/100g).

Ingredients
  

  • 1 red onion 80g; 35 Kcal
  • 1 medium aubergine 220g; 55 Kcal
  • 2 Courgettes 500g;90 Kcal
  • 1 clove of garlic 5g; 7 Kcal
  • 1 small carrot 75g; 22 Kcal
  • 15 squirts of oil spray 15 Kcal
  • 1 tbsp curry powder 7 Kcal
  • 1 tin of chopped tomatoes 400g, 100 kcal
  • 1 star anise & 1 cinnamon stick 13 Kcal

Method
 

  1. Finely chop the onion and garlic. Dice the aubergine, courgettes and carrot.
  2. Put the onion and garlic in a medium saucepan and spray with the oil. Put a lid on and gently sauté for 10 minutes over low heat.
  3. Add the chopped vegetables and put the lid on again. Cook for another five minutes or so, then add the curry powder and stir well.
  4. Pour in the tinned tomatoes and enough water to cover the vegetables, using the tin. Add the star anise and cinnamon stick, season with salt and pepper then bring to the boil. Put the lid on and gently simmer for about 20-30 minutes.
  5. Serve warm.
