Spiced spelt cookies
Throughout the winter festivities I love having some seasonal cookies in a jar to snack on during the day. These spiced spelt cookies are one of my favourite treats, as they are easy to make, taste yummy & festive – most importantly not laden with sugar so they are more healthy than the average cookie. They are perfect for parties, or as edible gifts too! I always make them with dairy-free margarine, but recently substituted the egg with flax-egg (thus making them vegan) and they were still very yummy!

Method
- Preheat the oven to 180°C.
- Mix the flour, spices and baking powder. Cut the butter/margarine into cubes and crumble with the flour mixture, using your fingers. Add the sugar.
- In another bowl, mix the egg or flax-egg with the honey. Add this to the crumble, and combine into a dough.
- Shape small dumplings from the dough, then flatten them slightly between your palms. Place them onto a baking sheet lined with baking paper.
- Bake in the middle of the oven for 10-15 minutes, or until light brown.
- Transfer the cookies to a wire rack and let them cool.
- Dust with icing sugar, if you like.
