Chorizo and tomato salad

Chorizo ​​and tomato salad is a classic Spanish dish. It can be served as tapas or for a laid-back lunch with crusty bread. I used yellow and red cherry tomatoes to make the salad a bit more colourful, but you can use just the red ones (make sure they are ripe!) It’s ideal for picnics and parties too.

Ingredients
  

  • 200 g chorizo cooking sausage
  • 3 large ripe tomatoes
  • 1 handful yellow cherry tomatoes
  • 1 handful red cherry tomatoes
  • 2 shallots
  • Sherry vinegar
  • Olive oil
  • 2 cloves of garlic thinly sliced
  • 1 handful parsley leaves finely chopped

Method
 

  1. Cut the tomatoes into bite-sized pieces and halve the cherry tomatoes.
  2. Thinly slice the shallots and toss with the tomatoes.
  3. Drizzle with a little olive oil and sherry vinegar, season to taste, then stir in the chopped parsley.
  4. Thinly slice the chorizo and cook them in a frying pan until brown, then add the garlic slices.
  5. Cook for another minute over low heat, then add a dash of Sherry vinegar.
  6. Add the chorizo and the cooking jus to the tomatoes and toss well.
