Chorizo and tomato salad
Chorizo and tomato salad is a classic Spanish dish. It can be served as tapas or for a laid-back lunch with crusty bread. I used yellow and red cherry tomatoes to make the salad a bit more colourful, but you can use just the red ones (make sure they are ripe!) It’s ideal for picnics and parties too.

- Cut the tomatoes into bite-sized pieces and halve the cherry tomatoes.
- Thinly slice the shallots and toss with the tomatoes.
- Drizzle with a little olive oil and sherry vinegar, season to taste, then stir in the chopped parsley.
- Thinly slice the chorizo and cook them in a frying pan until brown, then add the garlic slices.
- Cook for another minute over low heat, then add a dash of Sherry vinegar.
- Add the chorizo and the cooking jus to the tomatoes and toss well.
