Turkey chilli con carne

This recipe should be calledchilli con pavaas it’s made with leftover roast turkey. This recipe is perfect to use up leftover Christmas or Thanksgiving turkey meat, but you can make it with one fresh turkey leg too  – just roast it in the oven, then cool, shred the meat and follow the recipe. Serve it with rice and a crispy salad!

Ingredients
  

  • 1 onion
  • 2 cloves of garlic
  • 1 Tbsp olive oil
  • ½ red bell pepper
  • 2 medium carrots
  • 2 medium sweet potatoes
  • 1 tomato cubed
  • 1 Tbsp of tomato purée
  • 1 tsp spicy chipotle paste
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp smoked paprika
  • Salt & pepper
  • 200 ml passata
  • 500 ml water
  • 1 smoked chilli and tomato stock pot
  • 1 tin black beans
  • 2 cups of shredded roasted/ grilled duck.
  • To serve: Fresh coriander leaves or wild rocket leaves lime juice to serve

Method
 

  1. Peel and chop the carrots and sweet potatoes into bite-sized chunks. Finely slice the onion and chop the garlic. Cut the red pepper into chunks.
  2. Heat the olive oil in a large, heavy-based pan, then add the chopped onion and garlic. Gently cook until soft, then add the carrot, sweet potato and bell pepper and stir for a couple of minutes. Add the chopped tomatoes, tomato purée, chipotle paste and spices.
  3. Stir for a minute, then add the passata, water and stock pot. Bring to the boil and cook for 20 minutes, then add the drained black beans. Cook for another 10 minutes, then stir in the shredded turkey meat and warm through for a couple of minutes.
  4. Serve with a squeeze of lime juice and chopped coriander leaves or wild rocket leaves, scattered on top.
