Ingredients

  • 8 pork spare ribs
  • 1 lime sliced
  • ½ tin coconut milk
  • 1 Tbsp soy sauce
  • 1 Tbsp fish sauce optional
  • 2 kaffir lime leaves
  • 1 chilli sliced
  • 1 inch ginger grated
  • 2 cloves of garlic minced
  • 1 lemongrass chopped
  • 4 spring onions chopped
  • 2 Tbsp chopped coriander leaves

Method

  1. Place the lime slices in a shallow baking dish, then put the spare ribs on top.
  2. In a bowl, mix all other ingredients, except the coriander leaves, then pour this mixture over the ribs, coating them well. Cover the dish with foil, then marinate for at least 2 hours or even overnight.
  3. Preheat the oven to 160°C. Put the dish in the middle of the oven (covered) and bake for about 2 hours. Turn over the ribs at least once.
  4. Take off the foil, turn the oven to the grill setting and brown the pork on each side – this should take about 15 minutes.
  5. Serve the ribs with rice and the sauce (strained). Scatter the coriander leaves on top.
