Ingredients

  • 2 eggs
  • 2 cups porridge oats
  • 1 tsp baking powder
  • ½ cup oat yoghurt
  • ½ cup oat milk
  • 1 tsp vanilla essence
  • 1 pinch cinnamon
  • 1 tsp oil
  • ½ cup raisins or sultanas

Method

  1. Put all ingredients (except the raisins) in a blender and pulse until you gate a thick, smooth batter. Add more oat milk if it’s too thick. If you have time, rest for 15 minutes.
  2. Stir in the raisins, then heat a lightly oiled pancake pan, and spoon batches of the batter onto it (you can use silicon or metal pancake moulds).
  3. Cook the pancakes on both sides for a minute or so until golden brown.
  4. Serve the pancakes warm or at room temperature with your favourite sauce.
