Maple and lemon glazed parsnip bites

These sweet and sour, maple and lemon glazed parsnip bites can be served with an aperitif or as snack or on side of roast poultry or ham; warm or at room temperature. Perfect for parties and dinner parties.

Ingredients
  

  • 4 medium parsnips
  • 1 Tbsp olive oil
  • 1 clove of garlic minced
  • 1 tsp dried marjoram or oregano
  • 1 lemon juiced
  • 2 Tbsp maple syrup
  • Salt and pepper

Method
 

  1. Peel then cut the parsnips into 2cm cubes or pieces.
  2. Heat the oil in a pan, then stir-fry the parsnip for about 5 minutes until tender and lightly brown.
  3. Add the garlic, herbs, stir for a minutes, then add the lemon juice. Season with salt & pepper.
  4. Cook until the parsnips are dry, then add the maple syrup.
  5. Caramelise for a minute or so, stirring constantly.
  6. When the parsnip pieces are golden, transfer them to plate.
  7. Serve warm or at room temperature.
