Elderflower pork fillets
During elderflower season it’s worth making cordial or thick syrup from it because you can use these syrups for so many summer recipes – cakes, marinades, dressings, cocktails and so on. These elderflower pork fillets taste special because of myhomemade elderflower syrup( which keeps in the fridge for a whole year btw!)

Method
- Put the pork fillet in a hallow dish, next to each other
- Mix the lemon juice, soy sauce, elderflower syrup and thyme leaves, then brush the meat with this mixture.
- Turn them over and brush the other side too, then drizzle any remaining glaze over them.
- Marinate for minimum 30 minutes, or longer, if time allows.
- Heat your BBQ, griddle pan or frying pan.
- Season the pork with salt and pepper, then grill/fry the pork for 3-5 minutes on each side, brushing them with the marinade a couple of times.
- Serve warm with side dishes of your choice.
