Baked side of salmon with lemon and herbs

One large filet of side salmon can feed 6 people, so it’s  is perfect for special family meals to celebrate Christmas, Easter, Birthdays and other occasions. It’s best not to cover the fish with many  spices and extras – simple recipes work the best, like this Mediterranean-style baked side of salmon with lemon and herbs. You can add some chilli slices or flakes for a spicy version. Use fresh herbs appropriate for the season and your menu.  Serve it with a mash and a salad.

Ingredients
  

  • About 1kg side of salmon boned and skin on
  • 1 lemon sliced into 6 rings
  • 1 Tbsp Olive oil
  • 1 tsp dried Italian mixed herbs or marjoram
  • 50 ml white wine or prosecco
  • Fresh herbs: parsley basil,

Method
 

  1. Preheat the oven to 180°C.
  2. Put three slices of lemon in a row in the middle of a baking tray. Lay the salmon on top. Rub with some olive oil, then dust with the dries herbs. Season with salt and pepper.
  3. Pour the wine around the fish, then put the reaming lemon slices on top.
  4. Cover the tray with foil, then bake the fish in the middle of the oven for about 20 minutes.
  5. Rest for 5 minutes, then serve with chopped fresh herbs of your choice.
