Cod with edamame beans

If you want a quick, healthy recipe, try this Japanese-style cod with edamame beans! It’s ready within 15 minutes, it’s gluten-free, dairy-free, low-cal, low-carb and full of fiber. Serve it with brown rice, quinoa or a green salad.

Ingredients
  

  • 1 shallot
  • 1 red or yellow bell pepper
  • 1 Tbsp vegetable oil
  • 2 Tbsp soy sauce
  • 1 Tbsp rice vinegar
  • 1 tsp mirin or rice wine
  • 200 g edamame beans
  • 2 cod fillets
  • 2 tsp sesame oil
  • Coriander leaves
  • Salt and pepper

Method
 

  1. Finely chop the shallot. Thinly slice the bell pepper.
  2. Heat the oil in large, shallow pan and gently sauté the shallot and pepper pieces for 5 minutes. Add the beans, soy sauce, vinegar and Mirin. Add a drop of water, if needed.
  3. Put a lid on and cook for 3 minutes.
  4. Meanwhile cut the cod into bite-sized pieces.
  5. Put the cod pieces on top of the beans. Season them with salt and pepper and drizzle some sesame oil over them. Put a lid on and steam for 3-5 minutes, over low heat, until the fish has cooked through.
  6. Scatter the coriander leaves on top and serve immediately.
