Oat and almond pancakes with dates
These oat and almond pancakes with dates are sugar-free so perfect for those who are health-conscious. You can make them with gluten-free oats and egg replacement powder (or flax-egg) for a vegan version. Serve them with date or maple syrup and your favourite pancake toppings. These pancakes are ideal for snacking during the day too.

- Mash the banana in bowl. Add all other ingredients and mix well. You should get a thick mixture.
- If time allows, rest the batter for 15 minutes – this will let the oats soften. Add more almond milk if its too dense.
- Stir a little oil into the batter.
- Oil a pancake pan or a heavy-based frying pan, then drop dollops of batter into the pan. Flatten them into circles (or use a pancake mould).
- Cook for a couple of minutes on each side until golden, then transfer them to a plate.
- Serve warm or at room temperature with date or other syrup of your choice.
