Apple and blueberry rolls
These apple and blueberry rolls are incredibly easy to make for breakfast, brunch, afternoon tea or garden parties. You can use dairy-free puff pastry, then the rolls will be vegan. You can also use gluten-free pastry, if your diet requires.

- First make the filling. Peel and core the apples, then cut them into cubes. Put them in a small saucepan together with blackberries, cinnamon and sugar. Bring to the boil, while stirring with a wooden spoon. Turn down the heat and gently simmer until you get a thick, textured, sticky jam-like mixture. Turn off the heat and let it cool completely. - When you’re ready to bake, preheat the oven to 200°C.
- Unroll the pastry, then cut in in half. Spread the filling onto the two pieces of pastry then roll both up on their long side. You should get two sausages. Rest them in the fridge for 10 minutes, then cut each sausage into 6 equal pieces.
- Put these on a large or 2 small baking trays, lined with parchment paper.
- For a non- vegan version you can brush them with a lightly beaten egg – this will ensure a golden, crispy finish.
- Bake in the oven for 12-15 minutes until golden.
- Let them cool then serve warm or at room temperature, dusted with icing-sugar, if liked.
