Gnocchi with green pea and dill pesto

This Gnocchi with green pea and dill pesto is lovely vegan dish that’s rather filling too. You can use gluten-free or home-made gnocchi, if preferred. Serve it with a crispy salad.

Ingredients
  

  • 1 pack gnocchi 300g
  • 2 cups frozen green peas
  • 1 large or 2 small garlic clove
  • 1 Tbsp Balsamic vinegar
  • 2 tsp olive oil
  • Salt& pepper
  • 2 Tbsp chopped dill or more
  • 2 Tbsp pine nuts

Method
 

  1. Put the peas in a pan of water. Bring to the boil and cook for 3-5 minutes.
  2. Drain, but keep a little of the cooking water. Rinse the peas under cold water, then put half them in a small food processor, the other half back into the pan and keep warm.
  3. Finely chop the garlic and dill then add these to the food processor.
  4. Add the balsamic vinegar, pine nuts and salt&pepper.
  5. Whiz until you get a smooth paste. If it’s too thick, add some of the cooking water.
  6. Cook the gnocchi in a pan of boiling water. When they come up to the surface of the water, remove them with a slotted spoon and add them to the resting peas in the pan.
  7. Add the pea pesto and combine well.
  8. Taste, and season to your liking.
  9. Serve with some dill leaves scattered on top.
