Vegan almond and apricot oat cookies
These vegan almond and apricot oat cookies are actually quite healthy as they don’t have any added sugar or fat – yet they are sweet and moist thanks to the bananas and almonds. They are perfect for snacking during the day or for breakfast with your morning coffee.

Method
- Puree the bananas in a food processor or using a fork.
- Add the oats, grated apple, cinnamon, almond and vanilla. Mix well and let it rest for 10 minutes.

- Finely chop the apricots then add to the mixture and combine well.
